Discover Cavicchi EVO OilWe focus on quality not quantity; our oil yield per quintal of milled olives is 50 per cent less than what many other olive growers obtain, but in this way we extract and can offer you a special fruity EVO OIL, with a concentration of unique flavours, fragrances and scents; typical of our Salento region.
Cavicchi Organic Evo oil comes from olives from the olive groves owned by Azienda Olivicola Cavicchi Stefano of Avetrana, which selects the quantity and percentages of the special historical and secular cultivars: 34% Cellina di Nardò, 33% Ogliarola Salentina, 33% Leccino.
Respect, of the raw material and of the customer; quality, of the oil processing at every stage; transparency, through the traceability of the olives produced and the clarity of obtaining a special EVO oil with organic certification (see authorised MIPAAF control body IT-BIO-004 controlled operator N.32749).
Respect for the raw material, since an excellent oil can only come from an excellent and healthy olive, and it is up to us to process and mill it, keeping its best organoleptic properties intact; respect for the customer and his needs; respect for the territory, since oil carries with it the tastes and flavours of its land.
This special Cavicchi extra virgin olive oil is free from defects that, in most other oils, result from mistakes made during the harvesting, transport and processing of the raw material. Cavicchi organic evo oil guarantees high quality and certification in all its processes through careful selection of the olives and perfect cleaning of the mill, which is also strictly certified organic (see MIPAAF authorised control body IT-BIO-004 controlled operator N.32749).
The extremely high quality standards of CAVICCHI ORGANIC EVO oil are obtained:
from an accurate processing, carried out within 12 hours of harvesting, and also from an immediate and correct storage of the same directly in the stainless steel silo, owned by us, located in the temperature-controlled cellar, at the same certified organic mill where the milling took place.
Finally, storage is perfected by introducing the inert gas nitrogen to fill the same silo into which the CAVICCHI oil was poured.
This nitrogen expels the residual air contained in the silo, and prevents it from acting as an oxidant in the oil. Any oxidation would lead to a defect, 'rancidity', which is often found in many extra virgin oils, which from the mill once milled, are taken by many olive growers to their private homes.
Then, after natural decantation, the Cavicchi organic evo oil will pass from the silos under nitrogen, to the final stage of processing: i.e. bottling and labelling of cans and bottles where the year of the oil campaign and the production batch will be highlighted. This process is also controlled and organically certified (MIPAAF authorised control body IT-BIO-004 controlled operator N.32749).
